Tonight we had an easy to prepare stir fry recipe made with green pepper, broccoli, ginger and chicken and a sauce of OJ, soy sauce, honey and corn starch. Served over brown rice, all four of us loved it! In fact, there isn't much available for leftovers tomorrow. What will I take to the office?? I might double the recipe next time. I'd be proud to serve this to guests! The meal is quite healthy, has great color and flavor and lets us save room for something for dessert! Oh man... now I'm thinking about ice cream. DARN. This recipe is an 8!
- In 2 tsp asian sesame oil, stir fry 1 lb chicken cut into bite-size chunks until brown, about 4 min, transfer to plate; set aside
- Heat another 2 tsp sesame oil, add a chopped green pepper, 2 cups small broccoli florets, 1 Tbsp grated fresh ginger, 1-2 min
- Return chicken to skillet, add mixture of 1 cup oj, 3 Tbsp soy sauce, 2 Tbsp cornstarch, 2 Tbsp honey (and crushed red pepper to taste). Cook stirring constantly until thick, 1-2 min.
- Serve over brown rice, and top with sesame seeds.
