Day 6, Week 1 Grilled Bruschetta Chicken

One of my all time favorite recipes!! 

Marinating Chicken
  1. Marinate: Take about a pound of chicken breasts and butterfly them (cut them down the center to make two thinner breasts) and place in a glass pan or plastic bag with 1/2 cup of sun-dried tomato dressing.  Let chicken marinate for 10-30 minutes.
  2. Mix: 1 diced tomato (vine ripened is best), handful of fresh basil (do not recommend substituting dried) and a handful of shredded mozzarella cheese and another couple tablespoons of the sun-dried tomato dressing.  Add a clove or two of fresh minced garlic if you don't plan on making out with anyone that evening
  3. Grill:  Grill the chicken rotating once on each side so those super awesome criss-cross marks get on the chicken.  Once the chicken is cooked, stack it up so that you can put a piece of foil on the grill.  Put the chicken onto the foil and then top with the mixture from step 2.  Continue grilling until cheese has started to melt into the deliciousness that this recipe guarantees.
