Day 1, Week 3 Double Bean Burritos

LOVE this recipe.  Every time I make it, my husband starts wondering what he did to make me so happy since it's his favorite.  PLEASE no one tell him it just comes up on the rotation.  He cleaned my entire kitchen tonight.  Thanks y'all!  

Step 1: Mix 1 cup salsa with 1 can black beans
  
Step 2: Boil a bag of brown rice (Boil a Bag... find by the rice in a box)

Step 3: While your stove stuff is warming, chop up 1/3 bunch cilantro (we use cilantro in three recipes this week) and a lime

Step 4: when rice is done, mix with chopped cilantro and lime juice
 From here I'm giving you instructions on how to assemble quesadillas which are easier for little people to eat.  For adults, just make a burrito if you choose.
Step 5: spread a couple Tbsp of refried beans on a tortilla, top with chopped (or sliced) avocado

Step 6: add a layer of rice mixture and then some beans/salsa

Step 7: top with cheese to taste and finish with a second tortilla (or wrap up your burrito)

Kid version - time to eat!
